PORTERS at both RIVER CITY REVIVAL HOUSE & THE STARLITE ROOM
WHO YOU ARE:
You’re organized – You know what we have in stock and where to find it. Your requisition sheets are always accurate and the porter room is always tidy.
You’re fast, and accessible – You maintain your composure when it’s busy. You check on the bars regularly and have your phone handy so bartenders and management can contact you.
You’re observant – You notice when bars are running low on products, glassware, fruit and ice and restock it before being asked. You know what tasks need to be taken care of now and which ones can wait.
You are a teamplayer – You can spot when a co-worker needs a hand, and notice if the wind has blown garbage into the front of the building and are willing to help with the maintenance of things.
You’re an honest worker – You do your job well because you care. You care by being honest with your customers, when you say you will be a minute, you will be one minute or less. You care by showing that you don’t need to steal from anyone; customers, co-workers or the owners to make a few extra bucks.
WHAT YOU DO:
Now that we’ve addressed the personal side of being a porter at the Starlite Room, it’s time to break down your role. Everyone knows a porter’s main job is to stock coolers so the bartenders can serve the customers. But that’s not all a porter is responsible for. A porter’s role extends much further past just stocking coolers, and includes:
Ensuring washrooms are stocked with paper towel, toilet paper, and hand soap.
Stocking all fridges and requisitioning bottles of liquor.
Making sure all bars are prepped with fruit, rags, ice, enough glassware, biodegradable straws.
Weighing liquor bottles in and out accurately.
Handling and moving objects such as ice, glassware and bottles.
Changing pop bibs and pop gas.
Bussing the room
Setting up and tearing down the dishwashers daily. Wands soaked in CLR monthly.
Making sure the dishwasher chemicals are full and that we have some backups.
Washing and putting away glassware.
Removing ice from the wells are the end of the night.
Taking out garbage and cans and the end of the night.
Making sure the porter room is cleared off all boxes and that the bottles are neatly organized, monitor inventory of supplies and let management know of needed supplies
Promoting upcoming events.
ALWAYS let you MOD know if you use the last (better yet, second last) of something!
OPENING DUTIES
Porter(s) have the responsibility of getting the whole bar ready for the day. Stocking fridges, cutting fruit. Please refer to Starlite’s Porter Duties checklist for a complete overview.
IMMEDIATELY AFTER OPEN & FOR THE DURATION OF YOUR SHIFT
(regardless of start time)
All porters are responsible for the alcohol in the porter room, including what is requisitioned to the bars. Your reqs must be properly accounted for and documented. You are also responsible to make sure the room is bussed and cleared of any ‘hazards’, including spills, wet floors, and bodily fluids. Please refer to Part A, the final page of SECURITY POLICIES & PROCEDURES section for the proper procedure when cleaning bodily fluids.
CLOSING DUTIES
All porters have the responsibility of thoroughly cleaning and closing down the bar at the end of the night. This includes weighing out each bar, wiping the counters, washing and putting away all glassware and tearing down the dishwashers. Please refer to Porter Duties checklist for a complete overview.
At the end of the Show and only when a manager has come by to confirm you can start to shut down (and not a minute sooner).
Bring up your porter Req sheets and the scale.
Start by emptying the beer tub if there is one
Start weighing out one of the three bars (MOD will tell you which one, ask if you are unsure.)
Hand weight sheets to MOD or the Bartenders
Proceed with all other cleaning duties
By completing these tasks in this order ensures your Manager can properly complete the cash out in a reasonable time frame, and ask you questions if there are any discrepancies.
SIDE DUTIES
There will always be times when things are a bit slow, so getting some extra cleaning done in the porter room or around the venue is always expected during these times. If you aren’t sure what to do, ask your MOD.
DAILY CLEANING DUTIES
Please refer to the daily side duty checklist. There will be times your MOD will ask you to complete some monthly cleaning duties as well.
GENERAL HOUSEKEEPING
Please do not take any blue rags these are reserved for the kitchen only.
Rags are kept behind the porter room door, please do not take more than one or two pre-shift. Rags can easily be rinsed out and reused. Dirty rags go in the porter room near the washer and dryer, there is a laundry bin or in the hallway behind Corner bar, be sure to empty this bin into the one downstairs at the end of your shift. Please check to be sure there are no blue rags in this bag (those belong in the slaughter room in the kitchen).
Toilet paper, as well as other paper products such as napkins are also kept behind this door. If you need another tour of our building ask. If you can’t find something this is not an excuse not to do it, ask someone to help you.
Be sure to sweep behind the bars at the end of each shift. And if they are extra sticky mop them too. Even if it doesn’t look dirty.
